THE STORY:
This zero dosage sparkling Blanc de Blancs was harvested early to maintain the appropriate balance of acidity and ripeness. Proost is produced from Chardonnay grapes in the Méthode Champenoise style and shows pale straw in color. The extended aging provides aromas of complex minerals, grapefruit and brioche with flavors of bright citrus, toasted almonds and yeast. The mousse is light, but persistent, complementing bone-dry acidity and minerality.
Bottle aged en tirage for 24 months. Disgorged August 2, 2017.

Begins with aromatics of brioche, Meyer lemon and kumquat. The mousse is lovely as this has a nice astringency showing off challah bread, lemon zest and pink grapefruit flavors that sit alongside some great minerality. (Best 2017-2027)
